Side Dishes
3 lb. small potatoes (about 15)
2 tablespoons butter
2 tablespoons olive oil
2 cloves garlic minced
1/4 cup chopped fresh parsley
1/2 teaspoon crumbled dried rosemary
1/2 teaspoon dried basil
salt and pepper
Scrub potatoes well and dry; cut into quarters. Melt butter with oil in shallow roasting pan over medium heat. Add potatoes, garlic, parsley, rosemary and basil. Roll potatoes over to coat well with oil mixture. Cover and bake in preheated 350°F (180C) oven 45 to 55 minutes , or until potatoes are tender, turning once and uncovering for last 10 minutes. Sprinkle with salt and pepper to taste before serving.
